What You’ll Need:
- 2 tbs olive oil
- 1 sweet potato, peeled cooked and diced
- 1/2 red pepper, stem removed and diced
- 1 can of black beans, drained and rinsed
- 1/2 red onion, diced
- 1/2 cup frozen sweet corn
- 2 tbs cumin
- 2 tbs taco seasoning
Let’s Get Cooking:
- Heat oil in a fry pan over medium heat.
- Add all ingredients and fry til hot.
- Serve in boston lettuce cups, in flour or spinach tortillas.
- Enjoy.
