Edamame Garlic Spinach Hummus

What You’ll Need:

  • 3/4 cup of edamame, shelled
  • 2 handfuls fresh spinach
  • 1 can chickpeas (drained, save 1/4 cup of juice from can)
  • 4 tbs minced garlic
  • 2 tbs tahini
  • 1/4 cup olive oil
  • 2 tbs lemon juice
  • 1 tbs red pepper flakes

Let’s Get Cooking:

  1. Dump all ingredients into a food processor or blender.
  2. Blend until smooth. If needed, scrape down the sides and stir a bit after turning off the blender and using a rubber spatula
  3. Eat and enjoy.

  1. Yummy! I am always looking to try new types of hummus. I made a roasted carrot and garlic variation over Thanksgiving [recipe on blog] it was a huge hit!
