What You’ll Need:
- 3/4 cup of edamame, shelled
- 2 handfuls fresh spinach
- 1 can chickpeas (drained, save 1/4 cup of juice from can)
- 4 tbs minced garlic
- 2 tbs tahini
- 1/4 cup olive oil
- 2 tbs lemon juice
- 1 tbs red pepper flakes
Let’s Get Cooking:
- Dump all ingredients into a food processor or blender.
- Blend until smooth. If needed, scrape down the sides and stir a bit after turning off the blender and using a rubber spatula
- Eat and enjoy.
